Dim Sum Chef

Responsibilities:

  • prepare and cook Chinese dim sum dishes, making relevant sauces and filling
  • stock control and maintain the high quality of food
  • continuously develop new products for ongoing menu development
  • high awareness in hygiene and food safety issues
  • supervise the kitchen staff within the dim sum department
  • demonstrate techniques, advise cooking procedures and provide training to the assistant staff

Requirement:

  • at least 5 years relevant experience, gained within fine dining Canton style restaurant is preference
  • good cooking skills, with knowledge in the full range of Canton/ Chinese Dim Sum, pastry production method and recipes
  • strong product and market knowledge
  • effective communication and interpersonal skill

Kitchen Chef - Chopper

Responsibilities:

  • prepare large scale of food handling processes
  • maintain the highest standards of product and ensure cleanliness, sanitation and safety in kitchen
  • provide training and supervise subordinates including passing on skills, past experience and food handling techniques to them

Requirement:

  • at least 5 years relevant experience, gained within fine dining canton style restaurant is preference
  • knowledge and skills in Chinese cuisine kitchen management including stock control and rotation
  • possess cutting edge culinary skill
  • capable to communicate effectively with junior staff during training and the conveying of direction.

Restaurant Manager

Responsibilities:

  • staff supervisory, training and monitoring
  • hands on table service, rosters and etc.,
  • practically familiar with dim sum operations
  • co-ordination of functions and special events. Ensures effective communication within all sections and maintain positive work team spirit

Requirement:

  • holder of relevant diploma or higher qualification
  • at least 5 years experience in similar position
  • must be fluent in English, Cantonese and Mandarin
  • excellent communication and customer handling skill
